Allow the lamb loin to come to room temperature for some time. This ensures it cooks more evenly.

Season it generously with Nonno's Meat Seasoning.

Heat a frying pan over medium-high heat and add a splash of oil. Let the oil get hot (approx. 180°C - 200°C).

Once the oil is hot, place the seasoned lamb loin in the pan. Fry it for about 3-5 minutes on each side, depending on how you like it. This corresponds to a medium-rare doneness. (Depending on the thickness of the fillet) For well-done meat, fry it a little longer.
